For the Indian visa:
A limited number of nationalities can obtain a 30 day visa on arrival which, afaik, cannot be extended. Visas are available in some third countries and often for shorter periods than in the home country. Visas start ticking down from the date of issue so timing the application is important.
All of these complications go away if you are from the US - apply for a 10 year visa there.

2And your budget is very good, especially as you will be in India for 5 months. Obviously your scuba and skydiving will hit your budget as well as starting in Japan, but once in India you can see and do a lot on a minimal budget.
The only issue maybe crossing to India by a land border crossing from South East Asia. Where were you planning to cross? The Myanmar border? I am not certain this is open or possible to get to for most nationalities, so do a bit of research to make to sure.
I just brought bottles water when in South East Asia and India, but if you plan to camp some places then maybe a water purifier might be a good option.
Have a great trip.
