Where to hop from Turkey in November

Where to hop from Turkey in NovemberHi all!
I'm a female solo traveller. I'm planning to do a tour of Turkey at the end of October/early November, and have two major questions for the forum, if anyone can help.
1) I have a choice of two tours, one with the turquoise coast cruise and Antalya, and one without. Otherwise they are pretty much the same: Cappadocia, Ephesus, Gallipoli, Pamukkale, etc. I was wondering if it's worth going to the Turquoise coast that time of year, or will it be too cold to enjoy the water. I'm really a fan of swimming and water activities. Can anyone advise on what the weather will be like, especially the water temp that time of year?
2) Also, regardless of which tour I do above, I still have about 6 days of free time at the start of november to do some other part of Europe. In terms of flight connections, the places I'm considering at the moment are:
I know there's a lot of rainfall around Central Europe that time of year, and I don't want to be hindered by too much rain as I do love to explore on foot. I'm looking for a mix of experiences: food, art and history and natural wonders. Something a bit of a different culture from Turkey would be nice. Any ideas? Easy flight from Istanbul is preferred.
