1You did not state your passport so you may requirea visa on arrival.Thankfully,that does not take long.
Sultanahmet is the obvious choice if this is your visit (near Aya Sofia,Blue Mosque, etc)
Get the metro to Zeytinburnu, then change to the tram to Sultanhamet (or Eminonou if you prefer).
(NB: many much older guiidebooks suggest changing at Aksaray- don't. Zeytinburnu tram and metro share a concourse, so much easier)

2I would say it is not really worth it will probably take you an hour to get out of the airport and then depending on where you are flying too you will need to be back two hours before your flight, then it takes between 50-60 minutes to get to Sultanhamet so once you get there you will need to turn round and come back, And that is if your first flight arrives on time.

3I too am inclined to say it isn't worth it.You are listed as Ukraine so assuming you are travelling on a Ukraine passport you don't need a visa which is good.But you'll still need to go through passport control and then stow your luggage if it isn't checked through to your final destination.
Assuming you clear the airport in decent time,maybe(hopefully)by say,13.15(but it could be later depending on how busy the airport is)you can be in Sultanahmet by c.14.00 using metro and tram via Zeytinburnu as suggested above.
For an 18.20 flight you need to check in by 16.20 (assuming it is an international flight)which means leaving the city centre by 15.30 at the latest.
So really you are looking at more like 1½ hours.Is it worth it?Only you can say.
Rather planning definately perhaps wait until you land,go into the arrivals hall and see how busy it is,how long the queues are and how quickly they are moving.This is a busy time of day and there could be several flights landing together but if it looks clear and queues fast moving then you can make a decision whether to go into the city or not.

6You could jump in a taxi and go to nearby Yeşilköy(10 minutes max.) which is right on the seafront.There is a lovely marina there and plenty of seafront places to eat so you could have a leisurely lunch with great views and plenty of fresh air.After and before long haul flights a good walk around there would be a great tonic for you!
