How to re enter into Schengen region from UKHi there
I am a fiji citizen / Australia permanent resident and planning my first trip to Europe including the Schengen regions and UK.
I will be entering into Schengen region via Italy-Rome and because I am spending most of my time in Italy I will need to get a tourist visa from Italian consulate in Australia. As part of my plan I also want to travel to London for 3 days and return into Schengen region via Paris where I want to spend my remaining days before I return to Australia.
What would be the best visa option for me and how soon should I apply.

1What do you mean by "best visa option?" The way you've planned it, you'll need a multiple entry visa.
Are you booking a flight by which you will enter and leave the Schengen zone from Italy? If so, use that as part of your visa application. Request for a multi-entry (or at least double entry visa).
If your dates are flexible, why not go to Italy, then Paris, then London and return straight to Aus from there?

21 - confirm whether or not you need visas for Schengen and for the UK (you're on a Fiji passport?)
2 - If you need a Schengen visa, and are not a visa-free-90-day person, decide whether you want to go Italy-France-UK-Home (thus needing one visit to schengen), or Italy-flyUK-France-Home (thus needing a double-entry Schengen visa).
3 - choose one, apply for correct visa(s)
