Here is my two pennies: I never took train from DN - Hue, but I did ride bike from Hue - DN via Hai Van pass in 2012. It was an awesome experience. The route is very beautiful and not too long to ride (only 45 miles). Most vehicles (bike, cars, big trucks) now go through Hai Van Tunnel, so Hai Van Pass traffic is very light and much less dangerous to ride. You will see a lot of travelers riding motorcycle/bicycles on this route.
On the way, you will see a panoramic view of Lang Co beach. and you can stop by Elephant Waterfall near Hue (very nice for swimming during summer)
Trust me, ride bike and you wont regret it. Hope you have a good time in VN.

Seconded. No better way to see Vietnam than from a motorbike.
Paradise seems the better known, but since they're in the same park, why not both?

4I have done both the train and bus (not motor bike) between Hue and Da Nang. Both very enjoyable. It is a win-win situation but I prefered the train. (And yes, the bus went over the pass and not through the tunnel).
Da Nang must sees: the Cham museum, the espanade walk passing the bridge (see it at night).
The cathedral, fisherman's church, Cao Dai temple are worthy. It is a good base for Hoi An, the Marble Mountains and My Son.
Hue: the citadel, the temples and tombs tour. Also go for a walk eastwards along the road on the same side as the citadel (alongside Hen Island) and into the busy streets there. You will see a few interesting temples and Chinese assembly rooms. The market by the bridge at the canal part of this walk is also worth a look but be aware that it can be overwhelming smell wise...
