Alaska to Panama

Alaska to PanamaSo I'm in the planning process for our next trip.
My wife and I plan on riding our bikes from Anchorage as far south as possible in 5 months, who knows maybe Panama?
What is the must dos and sees? We want to stay of main roads and travel of the beaten track?
Has anyone been through Baja recently? How do we get from the end of Baja to the mainland? Pacific Coast or Caribbean?
Any dangers or annoyances we need to be aware of? Is camping possible all along the way? How about warmshowers or couchsurfers?
We plan on leaving Mid June and need to be back in Australia by November.

1The best advice will come from the numerous online blogs of people who have done this. My thought however: Central America is a very compact region, safe, friendly and with a huge selection of points of interest. Why not miss out the vast distance involved with the USA and focus on CA?....you could easily spend 5 months in CA alone. If its all about miles traveled then Alaska looks an exciting "mission start point" on a map but for the best experiences in a limited time frame I would stick to CA...

6Thanks for the input. I have just come back from riding Sigon to Bangkok. We did not camp in SE Asia because most of the land is either farmed or people are living on it. I don't have any problem with staying in cheap hostels just need to be VERY cheap with my limited budget.
I would love to just spend time in CA but there is a lot we want to see in Canada. We will probably just sprint through the US as we have been to the west coast before. Mexico is a bit hit or miss with us as we have already traveled here, just not Baja.
We will need the camping gear for Canada and the US, maybe we should just send it home from there and stay in Hotels when we get to CA?
