Cycle Tour in Turkey - Van/Dogubayazit to Goreme

Cycle Tour in Turkey - Van/Dogubayazit to GoremeMy wife and I are looking for route itineraries between Lake Van (or Dogubayazit / Mt. Ararat) across the eastern mountains to Goreme / Kayseri. Tour planned for June - July 2013. We've got 10-12 days, hoping for a scenic but direct route avoiding main roads. We're good with camping but would also like to stay in some interesting cities and towns for culture, good food, and showers. We're interested in:
1) Route ideas
2) Recommended places to stop/stay/visit
3) Any sections we should avoid - or take via bus (because they're unsafe or best to spend limited time elsewhere)
4) Road conditions (Would touring road bikes with 700c wheels be ok? Or should we take our 26"-wheel mountain touring bikes?)

1I have cycled around in Eastern Turkey a bit and always stayed in hotels. Towns with over 10,000 people typically have at least one hotel. You can also try couchsurfing. The roads are quite good and 700 x 32 or 35 are suitable sized tyres. IMO all sealed roads are ok. There are plenty of big mountains.
