Editing is back! And cake
Hey! Editing is back!!!! Woo Hoo!!!And, to make this food oriented. I always thought the bundt cake was pretty much history but a woman in my office made an amazing one for the birthday of another woman here and a pretty good carrot cake for today. It was a bit dry and I prefer regular carrot cake so the frosting is on every bite.

Carrot BreadFrom The Fanny Farmer Baking Book, by Marion Cunningham
WET Ingredients
1 1/3 cups sugar
1 1/3 cups water
4 TBSPS (1/2 stick) butter
1 cup grated raw carrot (about 3 carrots) —I used three carrots and got nearly 2 cups shredded. I just use the extra, no problem. -mw
1 cup raisins
1 tsp salt
2 tsps cinnamon
1/2 tsp ground allspice
1/4 tsp nutmeg
1/4 tsp ground cloves
Bring the first group of ingredients, above, to a boil. Lower heat and simmer 5 minutes. (I also added about 2 TBSPS chopped fresh ginger to my last batch, -mw)
OVEN: preheat to 350º F
Grease and flour a 9x5x3” loaf pan. (I use a 9x9” square cake pan, with a parchment paper liner bottom and sides, lightly sprayed with PAM food reslease spray. )
Let mixture cool to room temp, about 1 hour, or even overnight.
DRY Ingredients:
In a separate bowl or on a sheet of parchment paper, combine
2 cups flour
1 tsp baking powder
1 tsp baking soda
When wet mixture is cool, stir in and beat the dry into the wet, adding..
1 /12 cup chopped walnuts.
OPTIONAL: 1 cup crushed pineapple, preferably fresh. If used, you will have to increase the flour by 1 cup.
Bake at 350º for about 45 to 60 minutes, or until top is golden brown and surface springs back at a light touch.
Let cool thoroughly on a rack before cutting.
Frosting unnecessary.

I like carrot cake a lot.Another thing that doesn't exist in this part of Italy (unless I make it myself).
If you tell a Sicilian that you eat carrots in a cake they look at you like you are crazy......

How about _tomato soup cake- made with a can of condensed tomato soup? The Joy of Cooking calls it a "curious combination" that makes "a surprisingly good cake."This is my current go-to Carrot cake recipe. I add chopped almonds. It has an interesting method--the oil, egg, and sugar are emulsified in a food processor.
I use a different frosting recipe.

NOOOOOOO Anonimo! One has to have a cream cheese frosting on carrot cake, it's required.
Admit it: what you really want is a dish of cream cheese frosting, sprinkled with some carrot cake crumbs.
I once had a Sauerkraut Chocolate cake. Ehhhh!!!!
