1Spend more time in the far north. Grab a bus up to Chiang Dao, explore the cave and mountain, or over to Pai, Soppong, Mae Hong Son, Mae Sariang, Doi Inthanon N.P. etc. Rent a motorbike and explore that way if you have riding experience. Plenty of good dayrides out of Chiang Mai too. It's the sweet spot now with clear skies and good temps in the hills.

2Not sure how you're getting to Cambodia, but either way you'll need to head south, so I suggest seeing some sights between Chiang Mai and Bangkok, specifically:
Ayutthaya - for some of the coolest ruins in the country (in my opinion)
Kanchanaburi - for the Death Railway, beautiful Erawan Falls, the Bridge on the River Kwai
Khao Yai National Park - for jungle trekking and animal viewing
Easy to get around to these various places by bus/train.
