In Zion, you could walk up the Narrows until you feel you've walked far enough, and return the way you came. The East Rim trail is similar to the West Rim trail that leads to Angel's Landing, only without the acrophobic challenge of Angel's Landing at the end. Again, you can go as far you feel appropriate. There are many other easy walks and strolls of various lengths within the park.At Bryce, you can do the loop through the Navajo Trail, Queen's Garden and Wall Street, that's a solid moderate hike. Also, the Fairyland Loop is a good choice - do those two, and you've seen 85% of what there is to see at Bryce.
You're going to be in the area for "a few weeks"? I hope you have more on your agenda than easy-to-moderate dayhikes in the two National Parks.
