Leftovers

Any of you guys still got stuff leftover from Christmas?

I just spoke to my sister,and she has still got one and a half Christmas cakes left ;-)

Very large cakes too.....one was a gift from my parents,and the other from her husband's parents......

What can you do with leftover Christmas Cake.....apart from give it away (but who wants it in January?)

She could use slices for French Toast -- dip in egg/milk mixture, fry and have for breakfast.

If it's moist and dense enough to hold together, cut into small squares (or squeeze into round balls) and coat in chocolate for truffles.

Our freezer has 1 loaf of banana bread and 2 dozen cookies, all frozen day-of-baking before Christmas. Also have some cinnamon-spiced nuts - great on spinach salads -- and 1 last quart-sized bag of white-chocolate coated pretzel/cereal/dried cranberry snack mix.

I've still got a hunk of cooked turkey in the freezer.

Jamie Oliver suggests making a trifle out of leftover Christmas cake.

Here's a recipe for an ice cream cake. It begins "Steal your husband's [liquor]" and "crumble bits of cake into a bowl, slosh in some booze and toss with fingers."

Do the stock made from the goose carcass, and the goose fat and the goose dripping count as leftovers? If so I've got plenty. If not, then nothing.

I usually make an extra pavlova and my mum makes and extra trifle for Boxing Day breakfast. That is the extent of leftovers in our house. This year we were away from home and had a picnic by a lake so I didn't even have my Boxing Day treat.

Bread pudding is a good way to use up leftover cake. Reduce the amount of sugar in the custard-like goo that holds together the cake fragments. If the cake is really stale, maybe it could be transformed into crumbs for lining a souffle pan.

No,this is English style Christmas cake,not pannettone.With marzipan and icing.

Thanks for the ideas above...truffles,ice cream cake and bread pudding sound great to me...I'll pass on the suggestions.

Left-over fruitcake/Christmas cake: Dice small-- 1 cm -- and freeze. Pull out a handful and microwave to thaw and heat, then sprinkle over ice cream. (I have a friend who says he gained 2.5 Kg over the winter doing this, so be warned.)

I have left over Stollen. Sliced and frozen...great for breakfast anytime..it defrosts very quickly

Stollen is the German version of Christmas Cake.....not that different from the Italian pannettone.

I prefer the stollen actually..more fruit,more spices and (usually) there is marzipan in there as well.

Hmm..the marzipan in the middle is the best ! Its a heavier more dense bread unlike panetone,lots more fruit and usually covered in a thick layer of icing sugar. Over here on Planet USA I buy it at Aldi.

I have honed my shopping and cooking abilities to make certain that nothing ever lasts for more than 3 meals, even if some is made to freeze.
