Scrambled eggs mixed with sauteed chirizo served on a tortilla with salsa.
Last night my husband took leftover taco meat (ground beef) which had bacon in it and mixed it with eggs and potatoes and onions and some chili sauce, cooked it up and served it on a tortilla. I was yummy. I also like Quiche.

I thought I saw tony on another thread since we've been back but I could be remembering wrong.

Sashac-- since when does starting to sound insane make for a worrisome state of affairs? ( Gonna try the Thai version next time.)

nutrax, that's what I did with the left-overs.
Getting back to our sort of "normal" is nice. But we're still missing some....

Captain: Omelettes, soufflés, custards, oeufs à la neige/floating island. Hollandaise with the yolks, pavlova or other meringues with the whites. Chess pie. Lemon meringue pie. Egg nog. Sabayon.

CC: Newburg sauce for Seafood Newburg, which I made for the first time last week. It was surprisingly quick and relatively easy to make. One bite and my spouse said "Oh my! This just has to be bad for you! It tastes too good."

Did anyone mention good old hand-stirred home -made mayonnaise?

Once you get the hang of the simple basics there's plenty of changes to be had to your pale gold creation by mixing in such thinga as tomato puree, whipped cream, thick yoghurt, etc,etc.

Helloo Midwesterner, and Weaver how you doing? Vinny and Sashac, Crazy Eddie are you still crazee?

Some good ideas for the eggs, what I have in the fridge - eggs (obviously), one or two slices of ham, tomatoes, half a bit of cucumber, home cooked corned beef, baked pasta, lettuce and a bag of carrots. Cheese. Something savoury for a meal. Plus an assortment of sauces - tomato, worcestershire, soy and mayonnaise. Suggestions?

Pouring (raw) freshly beaten eggs over cooked pasta makes a very nice sauce. Add your ham and tomatoes and some pine nuts if you can find some in the back fo your pantry.

Hollandaise sauce to go with your poached eggs.

No updates weaver, everyone's been sort of nice really, untidy but nice. I did mention to one of my guest that if they could get sick from being untidy, they'd be on life support.

Chef's salad
Make a salad with the lettuce, cucumber and shredded carrots. Top with julienne slices of ham & corned beef, tomato wedges and slices or halves of hard boiled egg. Whatever dressing you fancy. You don't mention cheese, but you can add that as well, in you have it. You can make one big one or individual ones. Looks like this

You could also make a Cobb salad, but that really demands bacon and avocado. chicken is also traditional, but you can use ham or even the corned beef. It's a similar concept. Chop up the lettuce & cuke, Shred carrots. Mix and put in individual bowls. Dice the ham, beef, tomatoes,avocado, hard boiled eggs, and cooked bacon. Keep separate. Line them up on each bowl so it looks like this. Serve with a mustard vinaigrette.

CC -- you could also make a kind of pasta alla carbonara using the ham, beaten eggs and some cream if you have some.

I was waiting for GS to come back to hear about Donkeystone's latest guests but this present lot doesn't make for good stories.
