15Good choice to add another night to the coast, and skip Joshua Tree (and my uncle lives in Joshua Tree).
There are tons of things to see along the coast, Monterey Aquarium, kayaking in Elkhorn Slough or Monterey Bay, hiking around Point Lobos, skip 17 mile drive, Ano Nuevo State Preserve, Bixby Bridge, McWayFalls near Big Sur, Hearst Castle, elephant seal rookery just north of Hearst, etc. and I know I am missing a ton of places but it is early and just on first cup of coffee. Oh and be sure and stop at Nepenthe just south of Big Sur for beautiful views and a drink or lunch.

18OP, if you're for real, I'd be happy to get together with the two of you in late April in London. I'll take you both to the Scotch Malt Whisky Society there and talk with you in detail about your options in the Western United States. Over time, I've gotten a little fatigued writing it out in detail for folks here and then having them vanish, but if we were to meet up in person I'd be very helpful. And the malt's on me.
Let me know if you are interested, and we'll take it from there. I am very well traveled in the U.S., especially the West.
