Cool and wet, with snow in parts of the interior (eg Tongariro). You can pretty well do any of the summer activities during the winter if you wanted to, but you just need to dress warmer.The N Island is definitely more of a summer destination with its beaches and such, whereas the S Island is a better year-round destination with lots to do during the winter.
