I am not too sure about much ethnic stuff in Cairo, but there's a mountain of traditional music to be found. You won't have to look around for very long to find lots of it.2
Makan on Saad Zaghloul street near Saad Zaghloul metro station, 100 Copies on Talaat Harb Street, Radio Cinema or something like that also on Talaat Harb street, sometimes stuff in the very expensive Cairo Jazz Club, Darb 1718 in Old Cairo. Look up their websites or Facebook pages and also check out listings on Cairo360.com and english.ahram.org.eg.5
Beit Suheimi in the Islamic quarter (near Khan al-Khalili) has free folklore every Sunday at 6:30 / 7 pm (Winter / Summer).If you go there, would you post a quick report how it was? Thanks.
