They are NOT going to hold a plane. I am not saying it never happens but if they did that every single delayed flight would result in massive delays across the whole network. Your flight from LHR to CDG probably has people making connections to more than 30 different destinations- they are NOT going to delay 30 other flights!
CDG is, IMHO, pretty bad as an airport to navigate and make connections.
60 mins is tight as the gate will close 20 mins before departure and just getting off your plane from London may take 10 mins if you;re in the back. That's 20min to make your connection and perhaps go to a different terminal. There may or may not be a security check (no immigration as you are in transit). The smallest delay will screw up your plas.
Yes, It's AF's responsibility to get you on teh next flight but if that's 24hrs later there is little they can do apart from making you wait 23 hrs... maybe you get a hotel- maybe not.
I would see if you can get a flight going into CDG 1 or 2 hrs earlier- you will have some time to kill but that may be better than having 24hrs to kill...
If it were me and I had baggage, I wouldn't do it unless I could easily retrieve the baggage on it's arrival 1-2 days later.

I've experienced this problem with Air France. You may make the connection, and maybe not. If you're ok with a delay (and a very high likelihood that your luggage will be delayed if you're not, unless you're doing carry-on), then go for it. If it's the airline's fault, they should pay for hotel, new flight etc. If it is weather or other-related, the airline will take no responsibility.If it were me and I had baggage, I wouldn't do it unless I could easily retrieve the baggage on it's arrival 1-2 days later.

Connecting on the same airline makes them responsible for you. If you miss the connection, they will either put you up in a hotel until the next flight or route you on other airlines to get you there -- and also compensate you monetarily for the inconvenience. I would not worry if you don't have an absolutely strict deadline for arrival.
