Passport formalities when crossing borders, on the Mekong?

I'm researching a kayaktrip on the Mekong Laos-Cambodia-Vietnam and am trying to find out how to get stamped out of one country and into te next. I guess there are no tourist approved border crossings along the Mekong or is there?

Of course there are. Lots of people will be doing just what you are doing -- most in sampans rather than kayaks, but the Mekong has being the highway of Indochina for millennia.

In a boat, I crossed from Vietnam to Cambodia just upriver from Chau Doc, but there must be station for people going the other way.

Was there a borderstation right on the bank or ?

Of course I know locals use the river, but many places in the world there are special borderstations for tourists and others for locals only.

Not sure if the river crossing from Laos to Cambodia is still open to tourist, see http://www.canbypublications.com you may have to catch a ride over to the road crossing to get stamped out Lao and into Cambo.
From Cambodia to Vietnam the border posts are about a klick apart and right on the riverfront. The Vietnam post actually "floats" like a floating dock that rises and falls with the water level. You'll likely be asked for some "Tea money" at both crossings, anything unusual is an excuse for some "fees."

We tied up to a crude dock then trotted up a ramp and down a path through the jungle to a little compound of buildings where they took our $20 and stamped our passports. The whole thing had a bizarre Conrad feel to it.
