Firstly,there's no point in getting a taxi to come to Ha Tien from Chau Doc,you might just as well get one from Ha Tien in the first place.Although I've never taken a taxi from here to Chau Doc,it's a similar distance from here to Rach Gia,and a taxi from Rach Gia to Ha Tien (97km) is about 1,200,000 VND-roughly 60 USD. However that's for a straightforward journey,with no stops or sightseeing,I should think a meter taxi for a day is going to be around 2,000,000 VND or 100 USD.You might be better off getting a private car and driver.I was quoted 1,400,000 VND for a private car to go to Rach Gia from here ,spend a few hours in Rach Gia and return.You can't really book that in advance,but sort it out when you arrive in Ha Tien,I can arrange that for you when you get here if you like.

Thanks Andy for the prompt reply. You have previously answered a different question from my other half on another forum.
We will take you up on the offer to organise a car and driver when we are in Ha Tien.
We will certainly have some beers in the Oasis bar when we are there in December.
