1On your first day, I think you will have time to take an abra across the Creek from Deira to Bur Dubai, and take a look around the old part of Bur Dubai near the Creek. There is also the Dubai Museum. It's no real problem if you don't get time to go to Deira City Centre, because there are other bigger malls such as Dubai Mall and Mall of the Emirates.
Since you have 5 days, I think you have enough time to get out of Dubai for one day. Abu Dhabi has a more traditional feel to it than Dubai. There are not as many things to see there compared to Dubai, but it is still worth a visit. You can get there by taking a bus from Al Ghubaiba bus station in Dubai. It takes around 2 hours to get from Dubai to Abu Dhabi by bus. However, since 16 November is a Friday (weekend in the UAE), I think a lot of people will be travelling by bus between the emirates, so you might have to queue for a while at the bus stations in Dubai and Abu Dhabi. The other days will be less busy.
On the morning before your desert safari, you could go to take a look at the Burj Al Arab. You cannot actually get inside unless you have a booking at one of the hotel restaurants, but you can still view it from outside. You could also visit Madinat Jumeirah - you can get good views of the Burj Al Arab from there.

2If you do go to Abu Dhabi, visit the Grand Mosque: http://www.szgmc.ae/en/
It is beautiful. Though it would be nicest to have a full day there rather than speeding back to dubai, but it looks like you have your evenings packed.
Plus, aren't you going to go to the beach sometime? There are lots of public beaches in Umm Suqueim...Kite beach is big and has lots of watersports/rental stuff available.

3#2 - That's a good idea about the Grand Mosque. Just one thing for the OP to be aware of is that on Friday it is not open to tourists until the late afternoon, around 5pm I think.
