In recent months, I've taken to using bean mash as a substitute for mashed potatoes. Chickpeas, red kidney and pinto beans all lend themselves superbly to being mashed.

I love re-fried black beans with some chopped (uncooked) onion in it, better than mashed potatoes.

Me too, sashac - and raw onion is so underestimated; I red or spring often in salads too.

As it happens, and notwithstanding my reduction in tattie intake, I've made some potato cakes to go with fish this evening - but I'll make that an OP.

I used one packet of sazon...a few shakes of adobo and a stick blender to puree some of the beans and they've got a nice flavor and texture.

A little more work than I was hoping for though......the Beans weeth Cheese recipe is more my speed....
