Lots of nice scenery around Ha Giang region. I'd rate it above Sa Pa...

Ninh Binh is a top spot. Hoi An with sunlight at different times of the day on the old buildings.

Each places have their own pros and cons.
Ha Giang: Dongvan Stone Plateau, Meo Vac, Ma Phi Leng, etc
Sapa: Ham Rong, Siver Waterfall, Lao Chai, Ta Van, etc.
They are ideal destinations for photography.
For trekking in Sapa, you should go to villages such as Lao Chai, Ta Van, Cat Cat, Shine Chai, there are many things to explore, from landscape to local people's life.
For hotels, suggestions for you: Holiday Views, Fansipan View, Bamboo Sapa, Chau Long. Homestay is also very popular in Sapa
Have a nice trip!

I think you can find it everywhere if you look,I found some great shots around places such as Cho Gao in the Delta. The places I went to were farming areas with a backdrop of palm trees and small thatched huts, brilliant shades of green in the late afternoon sun.

If you get to Nha Trang, Amiana Resort will be open mid January and they will have the best landscape in Vietnam. About as good photography as you will ever get! Beautiful shots over the man made natural sea water lagoon , across Turtle Bay to Turtle Island, or a shot from their sensational lobby with a huge infinity pool suspended 10 metres in the air and Turtle Bay as the backdrop. You won't find better than that. Maybe Turtle Island at sunrise but hard to beat.

I suggest you Sapa, Phu Quoc. Sapa has wonderful view from high mountain and Phu Quoc has beautiful beaches ;). Mai Chau trekking is a good one too. definnitely go by train. It's a good choice, not only cheap but also safe and you can take photos from the train ;)

As above plus the Central Highlands around Da Lat.
Also the area around Dong Hoi. Go inland for the caves and Ke Bang national park
