What is nice? A remote beach? On a volcano? In a disco? A river lodge? Luxury hotel? Beach party? Midnight mass at a church?It really all depends on where you will be as far as what you can access. Corn Islands? Ometepe? In the north near Estelli? Managua?
San Juan Del Sur would be the no brainer.
