Vegetarian food in Vietnam

I'm not looking for specifics, just in general. Perhaps a type of dish, which kind of restaurants, etc. It's not rocket science. For example, in Korea, you simply tell them you are buddhist.I'm going all over Vietnam, from Mekong Delta to Hanoi.

Some of the best vegitarian food outside of India that I have ever eaten was in the market at Dalat mind you that was in 1993 so things may have changed5
I'm also curious about this and will be travelling from north to south as well. What are some regional veggie dishes to be on the lookout for? I've read of one that's tofu and tomatoes but not sure of the name.Also, can anyone recommend a good place for veggie pho in Hanoi?

Buddhist vegetarian restaurants are called "Quán ăn chay". They do not sell meat, fish, or egg dishes. For cheap meals, look out for "Quán Bình Dân", which display their food in a glass cabinet at the front of the restaurant and you take you pick of dishes. Most restaurants have vegetable dishes on the menu. You could ask for "rau", meaning 'vegetable', or say "Tôi muốn ăn chay", meaning not meaning you want vegetarian food.Pity about your chosen diet, the seafood in VN is magnificent.
