Recommendations for my parents

After my wedding week on Santorini, my parents will stay in Greece for another week by themselves. They are early 50s, never traveled in Europe before, and my Dad has a bad knee, so he can't do too much walking, but a little is OK.

I am trying to find advice for something they can do after we spend a week together on Santorini. My Dad wants to stay on Santorini for a 2nd week, but I think that might be too long (and expensive) to stay on Santorini. My Mom is interested is a cruise or boat trips to other islands. Does anybody have any suggestions for cheap cruises/boat excursions from Santorini to other islands, or any interesting ideas for my parents? (I will also take them around Athens before we go to Santorini)

Your Dad is the one staying, not you. Many people can easily spend 2-3 weeks on one island, doing nothing other than relaxing. As far as expense is concerned, that depends mainly on the accommodation. There is inexpensive accom everywhere, even Santorini. Depending on time of year, it will be easier to pay less for equivalent accom on other islands.

Very unlikely that cruises will originate in Santorini. You'd have to return to Athens or some other start point.
There might be some day-trip excursions from Santorini, but there's no value in recommending 'cheap' alternatives for the simple reason that there will be very little to choose from. A local tourist office will have all the info you need.

If it's a matter of spending a second week on a different island, the easiest and least expensive way of doing this is to take a normal ferry somewhere else. There'll be minimally daily ferries to islands such as Naxos and Paros, both of which are early 50s friendly - a fair bit of tourism infrastructure but not as busy as Santorini. Better sandy beaches. And more convenient to take a day-trip excursion to Mykonos/Delos.
