Only 1 week in Ecuador

Only 1 week in EcuadorMy partner and I will be in Ecuador for only one week (that is all the time I can take from work sadly), and despite my constant research, I am still not sure what we will be doing while there. We will arrive in Cuenca on December 28 and are attending a wedding on the 29th. We do not have to catch our flight home in Guayaquil until January 4th. What would be a do-able itinerary for us? We really wanted to go to the Galapagos, but I do not think that will be possible (if it is, please let me know if you think we can do it! We want to very badly.) We like nature, so anything involving biking or some easy adventure-type stuff would be fun, we just do not know what would be reachable in the short amount of time we have. We would also like to go to the beach, and we are considering Salinas, since it is so close to Guayaquil. Thank you for any advice!

Yes it isn´t long. Although Ecuador is a small country you can base yourself in Cuenca, enjoy things there properly and then head to the beach.
There are several operators who organise biking trips in the local area, especially in Cajas National Park. You can also do some simple day hikes up there. It is about 30 minutes out of Cuenca or you can stay on the edge of the park in a place called Dos Chorreras. Weather up in Cajas is changeable to put it nicely but the scenery is spectacular.
I also think the area around Sigsig is interesting. There are some archaelogical ruins and some operators are starting to offer some activities there (rather than the standard trip to the market in Gualaceo and jewellery makers in Chordeleg which is another option).
Lots of people go to Salians for New Year. As a result it is overwhelmed - not enough toilets etc. IF you want a good party then go there but book accommodation in advance.

2Thank you! Yes I have been thinking about taking a day trip to the ruins in Ingapirca. It seems close enough to cuenca for a bus ride. I like the idea of a bike trip through cajas, but I was hoping we would see some of the cloud forests in Ecuador, but I think our short time frame will prevent that.
I think I may try to convince some other wedding attendees to come with us to salinas for New Years! :-) I wasn't sure what we should do for that holiday but if the nightlife is great there that is all we need!

4Forget beach and Galapagos. You won't have time for that.
What you can do is to visit Latacunga and do a day trek to Lago Quilotoa, maybe also climb volcano Cotopaxi.
If you like precolumbian sites, Ingapirca isn't far from Cuenca. You need to get off the bus either in Cañar or Tambo.
Quito has a beautiful old town, but it'll be too far bearing in mind you'll have only a few days in the country. Cuenca has pretty stunning colonial architecture too.
