15Honestly, I 'm not sure that I would bother with Plitvices Lakes and would instead head to Krka National Park which is on the coast.
If you insist upon going to Plitvice then you should figure about 4 hours there and drive to Zadar.
I don't know what cities you have been to in Europe but comparatively speaking Split is smaller (200K) and doesn't require three nights and you might be better served stopping in Zadar or Sibenik than backtracking to see these two delightful places.
Instead of picking up a car in Venice, why not take the ferry to Pula and pick up the car there and drop it off in Dubrovnik and take the ferry to Bari. Less days of car rental in a country where car rentals probably cost less. Less cost of the ferry. Probably overall considerably less money.

17Thanks everbrite, I might just do that ... ferry over to pula, and then rent it in pula, that would reduce our rental time by about 4 days, saving us a few bucks!
I say 3 days split, because we will probably end up going to trogir one day, and stay in split again for the night.
my GF saw plitvice lakes online and pretty much said it is the only thing we 'need' to do in Croatia.
Can I get ferry tickets in advance? I want to make sure we don't miss them when we're there!
Any recommendations on affordable car rentals in Croatia? I was thinking of just avis/budget?
Thanks a LOT for your help, you are like my very own Croatia tour guide!

Somewhere here on the TT is a list of car rental companies in Croatia. Try sixt and some others that are European only unless you have discounts for places like Hertz, Avis, Budget. When checking car rentals be sure to check the one week prices. When I was last in europe, in northern Spain in May, the price for 5 days was almost the same as for 7 days and it was very little more for 8 days.
I don't know about ferry tickets in advance. If you aren't taking a vehicle, I seriously doubt that there will be a problem.
