Why not fruit? Doesn't go very well in an omelet, but if you are aiming at a more healthful diet, it's a good deal. Doesn't have to be an orange. I had a bowl of strawberries this morning.Don't forget that glass of tomato juice or V-8.
Spinach & mushroom omelet is good. Sauté the mushrooms, then add spinach & let it wilt down. I can think of other things to do with spinach, but they involve, you know, actual cooking.
Chiles are good on scrambled eggs or omelets. Buy some fresh salsa (not canned or jarred) and dump it on. Add avocado slices.
Asparagus omelet.
You think of chives and parsley as herbs, but both are loaded with healthful stuff like vitamin A & C. Add a generous couple of tablespoons to eggs before scrambling or omeletting.
Zucchini fritatta. That also involves actual cooking.
Be British & serve baked beans.

A search on breakfast vegetables comes up with a list of sites with ideas - I liked a couple of the ones here that included shredded zucchini in pancakes. I'd make waffles, since I'm a lousy pancake-maker too impatient and turn them too soon. And roasted (microwaved for me) sweet potato mashed and used as spread on toast - with butter or cream cheese or maple syrup or cinnamon-sugar.10
Yes to the zucchini suggestions -- pancakes. or shredded and steamed or stir-fried and used as the base for eggs, poached or scrambled.We use chard rather than spinach. Steamed a bit and used as a base nest for poached, soft-boiled or scrambled eggs.
Fritattas and quiches can use nearly anything including chard/spinach. broccoli, bak choi, etc.
Jamaica has a breakfast recipe using cucumbers and salt fish. And all good J'can breakfasts often include callaloo (a green) with the ackee (a fruit that is used as a veg. ) and salt fish. And many of us are happy with callaloo and bread for breakfast, As my landlady/ friend taught me.

A friend of mine makes an omelette casserole with bacon, tomatoes, onions, green peppers, salt and pepper cooked in a dutch oven that's magnificent.I love green salsa on eggs, made with a bit of tomato.
In Egypt they eat an eggplant dish made with tomatoes, herbs and spices for breakfast. It's yummy.
