2It's a sign of the times, these days you don't necessarily need brains to become a waiter or have common sense for that matter, that would include restaurant owners and industry experts too. The waiter memory doesn't seem to be on the decline in Chinese restaurants where complicated orders are a regular occurrence. I put it down to laziness / inadequate staff training.

5I remember when the memorization thing started becoming the norm. Back then our orders were usually right. I always did get nervous if we had a lot of people in our crowd. I also find that, these days it doesn't matter if the order is written down or not. There's a fifty-fifty chance that your entire order will be right either way.
