It's difficult to do much in Belize with only two nights, because you wouldn't want to stay in Belize City and you have to spend time getting to any other destination.I personally would choose Chan Chich Lodge. With only two nights, you'd have to fly there (Javier or other charter from Belize City). Or, if you want to be on the water, I'd say Victoria House or Azul Resort on Ambergris Caye. You can do a 20-minute flight on Tropic Air or Maya Island Air to San Pedro from BZE.
Victoria House and Chan Chich are pretty expensive. Azul is very expensive.
Other than these, I'd recommend The Lodge at Chaa Creek near San Ignacio, Blancaneaux Lodge in the Mountain Pine Ridge, Hamanasi in Hopkins, plus there are several other very upscale places on Ambergris Caye, including Grand Caribe, Pelican Reef and The Phoenix.
