I asked the very same question a year ago;) Went there for our honeymoon. Looking at climate charts, July should be about the driest month, and as rain was my primary concern, I decided that the timing of the trip would be perfect. Interestingly, we got a lot of overcast days, and short showers in the middle of the day, but I guess statistically speaking, July should still be one of the best months to visit. Remembering that other "similar" beach destinations (Maldives, Carribean, Thailand) are in the middle of monsoon season in July, Seychelles was the best option for a romantic beach time-type trip in July.

As for the areas, there are 3 main islands, and smaller islands with only 1 boutique hotel on them. I didn't consider the small ones at all, so can only tell you about the 3 main ones. The biggest one (Mahe) was a bit of a disappointment. It's busy, has a considerable amount of motorized traffic, and the beaches aren't anywhere as pretty as those on the other 2 islands. Praslin (second largest) we didn't go to. La Digue (third biggest) was lovely. Hardly any cars on the island (perhaps 10 in total?), relaxed atmosphere, and beaches which often feature in those "10 best beaches in the world" etc rankings (images.google.com search for Source d'Argent). Loved it. Stayed in a rather pricey hotel called Domaine Orangeraie, which I can wholeheartedly recommend, but can't really advise you without knowing your budget. Use tripadvisor.com to find a good hotel, I always do and if you do enough research, you'll be satisfied.

Don'ts - don't stay on Mahe too long. 2 days are enough, if any. Don't stay in chain hotels. We stayed in Meridien and it was very far from our idea of lovely, secluded, beach-front boutique hotel in a paradise location.

Do - rent a bicycle on La Digue if staying there. Do try their salted fish and mango salad, it's awesome.

I agree with all of the above, July is a good time in the Seychelles and tends to be a bit quieter, before the europeans take their august holidays... have a look at tripadvisor for all accommodation, including "specialty lodging"..we stayed at a small self-catering guesthouse (has only 2 bedrooms), paodise guesthouse, and it was awesome..but note that it is not a resort style place...our experience has been that you can always go to the resorts and use their facilities if you buy food/ drink anyway...and everytihning is close on La Digue..enjoy

The latter half of July will be sunny/slightly overcast, not very rainy, and is the windiest time of year (which isn't necessarily a bad thing... good for sailing + wind-surfing and you are less likely to get overly sweaty / engulfed in humidity).

As pawelx mentioned there are 3 main inner-islands: Mahe (where the international airport is located), Praslin, and La Digue. Just to clarify, although I think it was just a typo, if you were to classify these 3 islands by 'big' 'medium' and 'small':
Mahe is BIG
Praslin is MEDIUM
La Digue is SMALL

I am based on Mahe so I can only offer first-hand accommodation suggestions here. That said: If you prefer good, luxury mid-range hotels/resorts with good food, ambience, spas etc. but not something extremely expensive you have a few options: Bliss-Hotel Seychelles is a small boutique hotel with a lovely ocean-front spa, offers a bed & breakfast package as well as a half board option if you would like to include dinner at the elegant Lounge 8 restaurant to your daily regime (www.bliss-hill.net). They have reasonable prices and are currently offering a long-stay package where if you book '6' nights or more you get the last night free. Please note that this hotel is not a resort... It is, however, what pawelx described as the idea of 'lovely': secluded, beach-front boutique hotel in a paradise location.
