1I was there in April this year. Did not hear of any dialous being converted to homestays. It seems to be a mostly local tourist destination for now; did not even see a single foreign tourist the 3 days I was there. Particularly if you do not speak or read Chinese, it will be difficult to get around on your own.
There are plenty of other hotels besides the Pan Tower International mentioned in the HK magazine article. Also I felt that Kaiping is safe. I walked around at night by myself and never felt unsafe/had any problems. Having said that, I am Chinese and speak/read Chinese and the local dialect so perhaps they think I am a local tourist.

3Yes, you will get by very well on standard Cantonese (meaning the Guangzhou/Hong Kong Cantonese). Even if you don't know Cantonese, if you can speak Mandarin, you will be able to manage without any problems.
Then getting to the dialous using public transport is not a problem though like taking public transport everyshere else, it does take a little longer and you have to walk more. I took a combination of public bus and motorcyle taxis to visit Jinjiangli (Ruishi Dialou is marvellous), Majianglong, Zili Village, Li Garden and Sanmenli.
I went from HK by MRT to Luowu, hopped over to Shenzhen bus station (right at the border) and took the bus to Kaiping. Coming back bus from Kaiping to Luowu and then back over to HK.

4i wonder if you offered the lady in ruishi some extra money and tell her youre a foreign student in china lalalalalal....maybe just maybe!me and my friend are going to give it a try in the coming weeks. last time we went to kaiping, we visited a small village out of town called shuikou. There, the local people seemed to think we were looking for our grandfathers diaolou...one day i'll go back and claim one and turn it into a guesthouse!
