1I understand that you will rent a car at Munich and travel through Austria and Slovenia to the Croatian border, leave the European Union, visit some places in Croatia, reenter the European Union and head back to Austria and Munich.
I suppose that you made clear with your car rental agency that this will be possible.
So you may go done along the Tauern highway up to Villach and then cross to Jesenice/Krainska Gora. May be you then go into the Isonzo Valley and dirve along the Italian border to Nova Gorica - Sezana - Lipica -- Skocjan caves - Koper, or better: cross the border at Nova Gorica/Gorizia and go to Duino - Miramare castle - Trieste - Lipica - Skocjan caves - Koper.
Then you will continue along the Adriatic coast, cross the border to Croatia after the scenic small town of Piran, visit the formerly (until 1798) Venetian towns of Novigrad/Cittanova, Porec/Parenzo, Rovinj/Rovigno with there typical Italian churches and campanili, may be take the ferry from Fazana to Brioni Island and end finally at Pula with it's famous Roman amphitheatre. From there you may head to the North up to Brestova, take a ferry to Cres Island, from there another one to Krk Island and finally a third one to Rab Island with the very scenic medieval town of Rab. From Rab you may cross by ferry to the main coastal road, follow it up to Senj and then head inland to the Pllitvice Lakes and finally to Karlovac and Zagreb. Then you may follow the highway A2 and reenter Slovenia close to Ptuj. You will then pass the Slovenian town of Maribor and the Austrian town of Graz, cross the Schoberpass and the lovely Salzkammergut with it's many lakes on your way back to Salzburg and Munich.
If all that is too much,go directly from Brestova to Rijeka - Plitvice.

2The tourist farms in Slovenia offer great accomodation. I reccommend this one: tourist farm Skerlj as a base to explore the southwest of Slovenia a bit. This area is where you'll find the best food and wine of Slovenia.
My secret tip for a cave visit: Krizna jama. This cave you can only visit in small groups on appointment.

8Sorry for a little late answer.
I will suggest more what to see - nature places than where to eat :)
I guess you will arrive in Slovenia through Karavanke tunnel. Here is ideas from my side for lets say one week (days belows are just approximately)
Bled - around lake, castle, vintgar gorge , maybe climb to Osojnica hill near where is nice view of lake
Bohinj lake - walk around, Mostnica Gorge , maybe Vogel with cable railway
Martuljek waterfalls (maybe at least lower waterfall), quick stop at Zelenci near Kranjska gora, Lake Jasna , Vrsic , Spring of River Soca
Around river Soca, Boka waterfall and others waterfalls and nice places, Kobarid Museum about 1st World War
Tolmin - Tolminka Gorge
Predjama Castle , Postojna Cave or Skocjan Cave
Lipica with horses
Socerb castle with restaurant ;)
I know you said you dont like much cites but Koper , Izola and Piran old city cores are quite interesting to see
maybe walk to Moon Bay near Strunjan where are also saltworks or to see Secovlje saltworks
Of course there are a lot of other interesting places I just mention some most interesting for me.

10Some days ago it was over 20C here and sunny without clouds, so even better for trips around Bled and Bohinj then in summer when could be too hot or with showers in the afternoon. But in last days is around 15C and more cloudy with some rain. But anyway normally there is no problem about trips around Bled or Bohinj except I am not sure if Vintgar Gorge is open. But I dont see reason that it should not be open. So I hope it will be nice weather around 1st May.
