Yes it can be done.
The Shanghai-Beijing express trains are 500 yuan and go overnight.
I would recommend Datong and Pingyao on the Beijing-Xi'an route.
I would recommend Fenghuang and Yangshuo on the Xi'an-Hong Kong route.
You can't to all these things, but pick the ones that sound good to you.

I would also recommend you fly from Xi'an.

If you fly south from Xi'an, you'll find it much cheaper to fly to Shenzhen then cross the border instead of flying directly to Hong Kong.

Pingyao would make an interesting stop, touristy as it is, but onward travel there to Xi'an can be a bit slow to arrange, if your schedule is tight.

Look at ctrip.com for airfares, which vary over time.

Look just about anywhere for the exchange rate.

You have 16 days.
I would rearrange your route to Shanghai -- overnight train -- Xi'an -- overnight train -- Beijing -- train (1 day) -- Hong Kong.
And look on http://www.xe.com for official exchange rates.
Cheers!

If you arrive at Shanghai airport during daytime, catch the maglev train to the city - 7mins to cover 30km rather than taxis, coaches or motorways. There are a few staircases to negotiate, if you're OK with your luggage.
