3 - 4 weeks from Hanoi to Hong Kong

Hi,
Haven't been able to do any research on the last leg of my travels through southern China from the Vietnamese border to Hong Kong. Would appreciate any suggestions on how best to spend about 3 weeks in this region?

Guizhou - The east has amazing scenery, villages, and food. (hills with minority villages in eastern Guizhou)
Hunan - The west has Amazing scenery, towns, and food. (Fenghuang, Dehang, Zhangjiajie)
Gunagxi - The north has great scenery, villages, and food. (the area around Yangshuo and the Longji rice terraces)

What kind of travel/sightseeing are you more interested in? Are you entering China at the Yunnan or Guangxi border?
