LOCAL MARKETS IN CHINA

We are going to travel around Shanghai-Beijing-Xian-Yangshuo & Hong kong. And we enjoy visiting local markets.
Does anybody have any information about markets at these places?
- Market Name
- Kind of market (food, flower, animals,...)
- Opening / Closing time
- Location

Beijing: Panjiayuan market (blog entry), Hongqiao market, Xiushui market, Yaxiu/Yashow markets. Just do a Google for any of these and also read this and Travel China Guide.
Shanghai: Assuming you're not just going to look for knock-offs... apart from the usual markets, stroll around the Old City area. Here's a blog entry and Travel China Guide.
Xi'an: Muslim Quarter and Shuyuanmen (Arts Street) (Travel China Guide info).
Yangshuo: There's a night food market on Diecui Lu.
