3weeks in thailand, where to go?

Land in Bangkok mid Nov and have only about 3weeks. What advice on where to go when wanting nice fairly quiet beaches (cant be arsed with noisy drunken types), jungle trek, seeing old temples/ruins, elephant rides decent hostels. This is on a budget so if pos no internal flights but if it really is worth it then i would take them. Will spend a day or 2 in bangkok shopping and trying out foods so advise on where to eat and stay there.
Cheers in advance.

Okay...take it with a small grain of salt as I live in the area...

But...

Khao Lak is a pretty nice place. Doesn't really attract or cater to the drunken, noisy, big belly, little swim trunk kind found a bit south of here. Plus Khao Sok National Park (largest in Thailand) is just North of here. The resorts range from bare bones to the Best in Asia (there is an award for that). November is a perfect time to visit as well. Great Diving too! Right on the Main busline between Bangkok and Phuket.

I would also take 4 or 5 days to get around Bangkok - the Palace, Temples, obligatory Tuk-Tuk ride. Make sure you hit the Weekend market for all your souvenirs.

Chiang Rai and Pai are also nice places to visit in the North. But I'm a beach person....
