Day tours- Craft workshops ?????

Hi,

I will be travelling to Thailand first time fo 3 weeks in the middle of July. I will be a solo traveller with quite a bit of traveling but no backpacking experience and 33 years behind me.
I'm planning to spend a week in the North and was thinking of doing day trips.

???? Which tour operator should i go for not being stuck with a bunch of pensioners and all too well lined up programme if u know what i mean ??? I'm esp. interested of seeing some craftsman at work for a longer time and not for just a quick look. Googled loads but can't find much other than visiting a craft village. Would i be better off just getting around there first and see what's on offer? I might get a better choice and price ???

Any good checked out tours anyone???
