You have a number of option for Legian/Seminyak style Phuket. Kata and Karon have been mentioned, but I get the sense tha these areas will still be far too touristy for your taste. You often see more white people in those towns than actual Thais. A couple of places that are in Kata but not right in the middle of it all are Mom Tri's Villa Royale, on the headland between Kata and Kata Noi beaches. A bit less heady is the very nice Kata Thani Resort down on Kata Noi beach itself. If you would like to enjoy even more peace, try the wonderful Mangosteen or the relaxing Evason .4
Ah, yes, forgot to mention that renting a car is quite easy. It's not a large island, fairly easy to get around, and you wouldn't need to taxi everywhere if you had your own transportation. Especially nice when it's raining and you don't want to ride in an open tuk-tuk! There are some very lovely drives around the island as well.5
Some of the best hotels in Phuket are on rather remote beaches without having much in the way of alternative dining options - places like the Laguna resorts, The Chedi, Amampuri, Evason. The Kata Thani might suit - Kata Noi beach is quiet but not TOO quite and you're just a few minutes taxi ride from Kata main beach. Or try the Hilton on Karon Beach maybe.

Please don't overlook the Khao Lak area... About 90 km. north of Phuket airport. (1.5 hour drive).... This area was the worst tzunami hit area .. everthing is rebuildt... but people haven't returned in numbers... so everything is much better priced than anywhere else.... Le Meridien has almost too good to be true prices (book with asiarooms.. they have an office at the resort... ) we just spent some really nice time there.. rented a "sporty" for Phuket airport pick up (600 Baht per day)... great freedom... if you are able/happy to drive... roads are ok.... signs easy enough to follow..8
In September/October it will still be quiet. Khao Lak and Koh Lanta will be almost dead, so would not recommend those, and also the Kata Noi area and Surin will be extremely quiet.9
I always get a rash when people look for 'non commercial' places to stay. Go stay at a kibbutz or monastery then why don't you. :)Check out pics and reviews of all kinds of food at chanchao.fotopages.com.
