Thanks for your advice. We tried to submit the form yesterday at the consulate in Seoul, putting the name of the first hostel that we booked into the section regarding the inviting person/organisation. Unfortunately, this was not enough for them, and they specifically said that they wouldn't accept the name/contact details of accommodation and that we had to list an individual. As we are running out of time here in Seoul we settled for the 30 day visa, which we'll have to extend once in China.
