Visas for China?

I assume that I can apply for a Chinese visa in Hong Kong but can I apply for a Vietnamese visa in Hong Kong too? My plan is to fly into Hong Kong then skip through China to Vietnam. Does this sound reasonable?
Thanks.

Also, hope you either have enough time to be spending in Hong Kong, or enough money to pay for express service. You'll need to leave your passport to get both visas one after the other so it could take some time.
Cheers!
