Two days in HCM

Two days in HCMHi guys,
First time poster on here....
Heading on a little trip to Vietnam and Cambodia with my girlfriend in January, and finishing up in Ho Chi Minh with 2 days to spare before flying out. Any suggestions on what to do, what's cool etc., there for a couple days?
Also, with the Cu Chi tunnels, does anyone know how tough they are to get into, move around etc. as by the time I get to HCM I will be just over 2 months out of a knee reconstruction, meaning I should have most of my mobility back, but it may still be a bit weak so might have to skip it if it sounds a bit too hard on the knees.
My interests are: History, getting absorbed in culture, chilling out and just experiencing new things; if that helps narrow down advice :)
Am open to any suggestions though for a good way to end what should be a nice break.

1Hi, try Saigon Street Eats, if you want to blend in with the locals at lunch or dinner. Really great and the hosts are amazing.

3You should be okay with the Cu Chi tunnels. The parts that are open to the visitors are enlarged a little to accommodate us larger western types. Try to combine the Cu Chi trip with the Cao dai temple.
Plenty of good museums in HCMC, plus the Post Office (not kidding- it is spectacular inside), Dam Sen Park.
