Pimped out Pork Pie

Got any ideas for a pimped up pork pie?

With the holidays fast approaching I'd like to give my mom and sisters some helpful hints.

Our traditional family recipe doesn't even use pork. It's a pound of ground beef, one mashed potato, ground cloves and allspice baked in a pie crust.

It's not bad, and yes, we'll always have that version at the table but it would be nice to have a newfangled tricked out version.

A mix of chopped pork shoulder and belly and chopped bacon with spiced raisins and apricot jam, using hot water pastry stock and gelatin. Or pork cinnamon, clove and apple.

What makes a pork pie apart from the filling is the crust, if you haven't got that right, you haven't got a pie.

That's just my name for it. I'm looking for something out of the ordinary, that will make everyone beg for seconds...

That tourtiere sounds really good. I think I'm going to have to make it some time. We usually do more of a pocket pie thing with pork with Mexican seasonings.

I also want to point out that Manch has been making an effort to do some more creative cooking. I think we've inspired him.

Thank you Vinny. I wasn't aware of that. Didn't do a lot of midnight masses in my house growing up and the one time I was invited to one I didn't really know any of the people there so I didn't go.

Nutrax's link has half butter and half vegetable shortening for the crust. I have no idea what my French Canadian cousins use but I would use lard for any meat pie.
