4I'll did something very similar (minus the flights to NZ).in Jan/Feb this year (Plus a dip into Vietnam).
I did it solo and didn't go "luxury", but also didn't do dorms or hard-seat. Also, I did many of the touristy things that require entry fees. I probably spent the equivalent of 4K NZ.in total.

5So, that is about 10 000 rmb a week for 2 people. Should be more than enough. Around 2-300 rmb a night for a hotel / hostel, food about half that or less. For trains, it depends on the route and the class, but Beijing- Xian is around 300-400 rmb. Attractions can be expensive - to see the terraccotta warriors is between 120-150 rmb depending on the time of year. This is an average price now.

7A few years ago I traveled for 6 weeks on about $NZ50 a day (including a couple of overnight trains & 2 domestic flights, but not the flights from NZ to China as I was already here) but these days I'd allow more like $NZ60 - ie 300 RMB as a minimum. Much of the time I was travelling solo so paying 50-100 RMB for a room or less for a dorm. Nowadays a cheap hotel (7-Days Inn, Home Inn or similar) costs around 200-250 RMB in a big city like Guangzhou. Sightseeing can be expensive as National parks can charge up to $NZ60 EACH for entry - something NZers are not familiar with!!
