Asheville, North Carolina and the Triangle area of Raleigh, Durham, Chapel Hill, North Carolina, would all be decent enough places to party. I've stayed out all night in Asheville, although it may or may not be your scene.Richmond, Virginia, has a bit of a scene, too. Both Richmond and Asheville have great beer bars. Mekong in Richmond and The Thirsty Monk in Asheville.

I second the idea of including some college towns on your trip. There is a somewhat official list of best party schools put out by the Princeton Review. For 2013, there are three southeast schools on the list: Florida State (Talahassee), U. Of Florida (Gainsville), and U. Of Georgia (Athens). I think you're crazy not to include Miami, especially in January. Though I hate to advocate spending so much time in Florida, Fort Lauderdale, Orlando, and Tampa have special party zones that are pretty happening on weekends. Phoenix blows but I imagine there's good partying in Tempe (Arizona State University) and Tucson (U. Of Arizona) is pretty cool.Note that college football will be finished by the first week of January and pro football will be in the playoffs. The party scene will be transitioning to basketball. Have fun!

Phoenix itself isn't a party spot, but the major suburbs of Tempe and Scottsdale are, at least to some extent. Not my scene personally, but there is plenty going on in those two cities for nightlife. I don't know if I'd travel across the country just to sample Tempe's frat bars and Scottsdale's "cowboy" clubs, but it's not like there's nothing going on. Don't get me wrong, one the whole, the Phoenix Metro is a deeply lame place, but for a bunch of dudes with cute accents looking to party, you could do a lot worse than chatting up the young ladies of ASU.I second Miami, and particularly Miami Beach.
Truly, most major cities have at least some sort of scene going on. What about LA?

How about Washington, DC? Most people associate it with stiff politicians in suits, but it actually has loads of nightlife.21
Hands down, def go to New Orleans and Tampa (Ybor City). The Hold Steady (from NYC) even wrote songs about how crazy Ybor City is. Places like Miami, NYC, and Las Vegas are ultra expensive. Austin is also good if you're a live music fan.22
January is football season, so any city with a pro team or town with a college team will have sports related partying happening on game nights for an American experience.
The college football season is well and truly over by January, except for one or two bowl games. The pro season is mostly over, just play-offs left and the Superbowl.

I can't say I know Jackson, MS very well at all. Was there once. I didn't see anything to suggest that there was nightlife of any kind. You might want to do more research on that.

In Mississippi, the only decent college town is Oxford--but it's a way better choice for you than Jackson.
