great ocean road

My husband and I will be driving from Adelaide to Melbourne mid January. We have 2 nights and 3 days for the trip and would like to know if it's safe to go without hotel reservations that time of year. We have no idea where we will be settling for the nights and would prefer to remain flexible.
We would also like to know the best places to stop for the night, and sights during the days considering our short time frame.

ADL to Melb via the great ocean road really needs 3 nights.
The logical stops if driving for 4 hours per day are:
ADL - Mt Gambier
Mt Gambier - Apollo Bay
Apollo Bay - Melb

Otherwise you will have to do 2 days of about 7 hours each.

Your choice.

mid January - high holiday season. could be very difficult or near impossible to get accommodation in some places.
