One way flights are expensive.And flights from Aus to South America are limited. Only Aerolineas Argentinas fly to Buenos Aires. And LAN and Qantas codeshare to Santiago.
If your willing to travel offseason you can get returns for under 1500. So you may be able to get a one way for less.
You really need to specify what dates your trying to leave.

Take a look at Emirates (look directly in their web) to Buenos Aires, Sao Paulo or Rio de Janeiro.6
Prices at the moment won't change too much.Looking at Skyscanner for early Feb - Emirates have cheap OW flights for under 1500 AUD to either Rio or Buenos Aires. But its a long flight (30+ hours).
With LAN and Aerolineas a OW flight is 2-3K.
And going through the US is about 3,500.

@OP - If you are really desperate to save money you could try this combo to Bogota for $1175 AUD according to skyscanner. As you can see it is one nightmare of a schedule. At 50 hours travel all up you might die of exhaustion before landing in Colombia. Alternatively you could make stopovers in Taipei and/or LAChina Airlines

Are you definitely staying in South America more than 1 year? If you will stay under 12 months you should get a return ticket. To buy a OW from South America to Australia is very expensive as well.
