Riots are rare. If you avoid Syntagma Square when there is a protest going on you probably won't even know it's happening. What can create problems is if there's a transportation strike going on. That's something you need to think about and figure out some alternatives just in case. This website will keep you up to date with strike information. I would say that as with general travel advice stay away from political demonstrations in any country and you will be fine. Greece is a fairly safe place, the worst you will find is the smog in Athens and the famed Greek hospitality being as mythical as the Greek Gods.4
There is no smog in Athens and there is still great hospitality in Greece. Stay away from the four blocks in central Athens and you will be fine. Be ready for some disruption from strikes and take them in your stride. Travelling is an eye opener. If you just want a beach holiday fly directly to Crete or Santorini or any of the other islands and miss Athens altogether - couldn't be a better time to go to Greece as you can bargain on prices.5
Any question makes sense from the perspective of the person asking it -- gives you an idea of what they don't know about the world.Rather than giving a simple answer, better advice might be to suggest changing the information-gathering strategies the OP has been using up to now, and/or improve ways in which that information is assessed.

Athens I dont know but visiting the 3000 islands in Greece is not safe at all if you have only one life.13
No one can tell you whether or not Greece will be "safe" in May of next year but you can keep current with strike information here: http://livingingreece.gr/strikes
