Day 2
Spend day in Macau, catch late night flight to Chaing Mai from MFM
Day 3&4 in Chiang Mai
End of day 4 catch night train to BKK
Day 5&6
New years in BKK
Afternoon of Day 6 catch flight to Phnom Phen
Day 7&8 PP
End of day 8, catch bus to Siem Reap
Days 9-11 in Angkor (SR) (weekend of Jan 4-6)
Day 12
Travel from SR to BKK (Bus and train through Poipet)
Night flight to Phuket
13-16 Jan (8-11)
Learn to dive around Phuket, try and see Phi Phi and Krabi
Night flight to HKG from HKT
Day 17 in HKG
Day 18 11:10AM flight from HKG to ORD

I would have skipped Hong Kong - Macau entirely and just go with ORD to BKK and back to ORD. Hong Kong is not cheap for hotels unless your idea of cheap is much more than mine.For Thailand, you are there at the highest time of the year for hotel prices.
What price range are you looking for?
Looks like a lot of time on planes, buses, trains or in transit.

I have a travel companion so we're trying to keep it to $50/pp/pd USD not including transport.Is this realistic? Are prices inflated in CM during high season as well?
Are there any places around Phuket that might be more off the beaten path? I'm not looking for nightlife, just a beach shack.

Macau is fascinating - you'll be glad you went.Yes, as #1 says, HKG hotel prices are high, and budget options not so good. I sent you a private hint - see message button top right. You'll well exceed budget there, but you'll get it back in CNX and Cambodia.
You seem pretty well researched , so you have a head start on most tourists who come here! It's a pretty well balanced itin, though 3 days is really minimal for Seam Reap - but then where to steal an extra day? You might find after 1 day in Phnom Penh you're ready to get out!
