West Indian cuisine gets dressed up at Trinbago. Spicy dishes such as callaloo (a tasty green-leaf vegetable), red snapper and vegetable potato pie are cooked with a grandmother’s soulful touch, but plated with an artist’s eye. ‘Calvin’s creations’ – the chef-artist-owner’s own work – dot the menu, and they’re all good.
