Fusion cooking that is far from the real thing

The sign on the entrance is real Chinese. Cooking however is Fusion style and a far cry from Hong Kong Canton Dim Sum and wider Canton style Chinese cuisine! Making dumplings is an art practiced by thousands in Southern China. It can not just be copied with a Western approach. Apart from the American Chinese chef, no (real) Chinese cooks working here and the results are disastrous. This regards the skin of the dumplings, the taste of xiumai, or that of filled Chinese mushrooms, and worst of all thier most favourite (and my favourite) Shrimp dumplings (xiajiao), with fluffy skins! Also the totally non-Chinese sweet-and-sour sauce of the shrimps dish! Too sticky! Some individual dishes might be acceptable, one of these mixed rice! The chaomien (their spelling) was horrible and a far cry from what this represents in a Chinese environment! Well this should give you some idea! The staff too is below standard. Plates were offered after serving dishes (we had to ask for them), and never refreshed despite the large volume of our left-overs! My advice? Get some real Chinese cooks, and some nice girls serving guests!
